I am currently using Microsoft Project to create instructor schedules. Each schedule has multiple courses for that "cycle" or semester. They are mostly all 900 hour programs that run for 150 days. Each individual course within the cycle has a required number of hours that vary for different programs. These dates must exclude holidays or excluded dates in calculating start and end dates for each course within the program to give accurate Start and End dates for the entire program. So for example: The Automotive class is 900 hours from start to finish. Within the program there are 9 different courses with varying hours(AUT101-12 hrs, AUT102 -36 hrs, etc) adding up to 900 hours total. So in order to have the schedule show the start and end dates for each course in a 6 hour day, it must skip over any holidays or other manually excluded dates within that date range.
Do you have any advice on how I can set up Access to do that?

This is an overly broad question that can't really be answered in the space provided.
You really have to sit down and map out your tables and relationships.
The Total Time Spent extended cut gives an example of excluding holidays.
There is a TON of resources here free but you will get the most out of following the courses and developing YOU prior to tackling a large project like this.
If you go back to beginner 1, Rick does discuss planning your database. Might be worth a review
