Donald, Office 2007 and Windows Vista have nothing to do with each other. You can still use Office 2007 even if you're running Windows XP.
Whether or not to upgrade to Office 2007 is a personal decision. There really isn't anything that's earth-shaking in Office 2007 that you MUST have. The new additions to Word and Excel are real nice (especially how they handle graphics and formatting) but not features you HAVE to get. Microsoft Access has improved some, but again not incredibly.
Now, as far as what tutorial I am going to be making: I'm going to let you, MY CUSTOMERS decide. I have both Office 2007 and Office 2003 courses available on the WAITING LIST. I'll be focusing my time where there is demand. Right now, Excel 2007 is leading the pack with the most votes so that's what I'll probably be working on next. Access 2007 is a close second.
This is not to say that there won't be more Office 2003 tutorials. They are getting a bunch of votes too. But you're right... Office 2007 is starting to become the most popular, and Office 2010 is due out soon too. :)
