Richard, are you looking for BASIC stock tracking techniques like getting stock data, calculating % return, charting results, etc. or are you looking for advanced analysis of those stocks? I could probably put together a BASIC tutorial on this relatively soon if you think that's enough.
As far as jumping to Excel 2007 or 2010, that's really up to you. Excel 2007 has added a lot of nice new features. For you, specifically, the RESEARCH feature lets you get real-time stock data right from the web directly into your stock sheets. That alone might be worth the upgrade.
I haven't read much about how Excel 2010 is different from 2007, but I suspect it will just be an incremental upgrade.
