I think this might have something to do with the calculations.
If you press F9 it will re-calculate for you or you can change this in options, Older versions of Excel:- Tools | Options | (Can't remember which tab) 2010:- File | Options | Formulas
Clicking out of the cell and clicking back into will re-calculate this is why you see it change.
