My document has suddenly appeared with arrow signs, signs that look similar to music notes where I have a paragraph space and dots after each word. I think it is because i accidently pressed shift+enter? not sure though.

I think someone turned on the PARAGRAPH SYMBOLS. You're just seeing the non-printable characters that represent spaces (dots) and line breaks.
Since you didn't tell me what version of Word you have, I can't help you turn it off, but Google "microsoft word XXXX paragraph symbols" and replace XXXX with your version. You'll find instructions.
