I personnaly learnt how to use Access 2007 from your seminars. I remember, you were using Access 2007 in the video and showing any significant differences in 2003 (which i was familiar with). However, for novice users who have no knowledge of 2003, it might not be that easy.
If time is on your side, the best option i propose is to combine 2003 and 2007 together just like you did for the seminars. The main training would be in Access 2007 but you would keep showing any differences in 2003. A novice user would then learn both versions at once.
This would also keep your video lectures at pace with the rapidly changing world.
As for Access 2010, i have not had opportunity to use it yet. However, an upgrade seminar would be sufficient to kick me off.
