I have gone through all the beginner courses for Access and am currently working on getting through the first few Expert classes. I'm building a fairly simple database for work and I think within the next few lessons I'll know enough to build what I need to build. My question is, if I stop the Learning Connection will I still have access to all the courses I've already purchased?

Yep. With Learning Connection you keep the classes you've purchased. With MYOLP, it's a membership like Netflix where you have to remain a member to keep watching.
