Since the Office Online Templates are no longer available from Microsoft for Word 2007, what other options do I have.

This option is only available in Office 365.  It is no longer supported in Office 2007.

I know it's not always possible to upgrade, for various reasons, but it's advised.

I actually have both versions.  However, there are certain graphics functions like having multiple photos next to each other that I have figured out in Word 7 but seem to be much more difficult in Word 365.

Did you adjust the wrapping of the images? There shouldn't be any reason why you can't align them in 365 like you could in 2007.

The reason I really prefer 2007 is I can use it offline and I choose when to save changes rather than everything being saved immediately after every keystroke.

You can turn that off. I do. It's called AutoSave. That's one of the first things I disable.

Autosave only works if the document is saved in OneDrive, the online cloud service.  Locally saved documents do not use Autosave.

I'm perfectly happy with AutoRecover which saves locally every X minutes. This is good in case of a lockup, power outage, etc. I've got it on my list to do a video explaining both.
