I have a table that has a few products (that the name never changes) that I would like to update the quantity and not create a new product (ID). Is there a video that might help?
IE: I have 15 vials of Pediarix, I administer 4 and get 5 more to add to my stock. So the Pediarix stock should be 16.
How do I change the totals (maybe a dropdown to + or -) without changing the name? (the new ones might ave a different lot#, but thr same name)

Not knowing what your current knowledge level is I would start you out watching the Free Invoicing video. I would actually point you to the members cut but I don't see that you are a member.
If you think about it adding and removing products is relatively similar to orders. In addition check out the Inventory TechHelp.
With both of those videos there is a list in the description of videos that are kind of prerequisite. Pretty close to the top of those lists would be having a good understanding of Relationships.
