How to Show Trends in Data

I have a log (LogT) of case movement showing progress by stage and date. The cases might have one to five different stages with corresponding dates.  
Can someone suggest how I would manipulate this data so that I can track and see trends.
It is just a simple Log table which is derived after running four separate queries.  The queries are working fine but I am now at the point where I need to conclude this task.
I would be very grateful for any advice on this.

Your question is too broad without knowing your business, don't know what you're trying to track, what to display, how to display, what parameters, etc. Can you be more specific?

Just shooting in the dark, these might give you ideas.

Apologies for my vagueness!

My database is based on the status of applications.
I have a basic tracking table called LogT which is updated when a record in CaseT (application) is changed.
LogT - LogID, Application, Stage, DateUpdated
Each time an application in CaseT changes stage, it is logged in a table called LogT and the date of change is recorded next to it.
I want to create a query that will look at the log table, check each Application which will have more than one record and calculate the number of days between each stage it has passed through.  Maybe send the result to an Excel table.
I know what I want it to do but can’t think for the life of me how to do it.  Please advise.
