I don't recall seeing this and perhaps it is already covered; but do you talk to the customization of the Access menus and how to enable / disable them to meet your needs? (e.g., Disabling the print button on print preview,  hiding other buttons and features from users depending on their admin level, etc.)

I can't remember if Ribbon customisation is covered in the Security Seminar.
This can get quite trick and enabling/disabling can lock you out of the db completely.
You can build up the ribbon using a XML tool or writing it yourself.
Might be a cool mini Seminar.
