I am starting a database for a copier repair company and I am not familiar with Access.  We will need to track what type of service contract each customer has, the amount, meter reading, type of equipment they have, etc.  Would I set these fields up in the CustomerT?

Nope. I would have a separate table for service contracts, another table for meter readings, and yet another table to track their equipment. The customer table should ONLY contain fields directly related to the customer. If the customer can have more than 1 of something, that "thing" should be in its own table.
