Normally when defining tasks I would add which people would be working on each task. If Sue was working on both Tasks 1 and 2 then Task 2 would be dependent upon the completion of Task 1. If I increase (or decrease) the duration of Task 1 then the start date for Task 2 would be adjusted accordingly. That way I can see the impact of adding or removing people from tasks.
The above is an example of a Finish-To-Start dependency. I may also have Start-To-Start dependencies where both tasks may be started on the same date but only if both tasks are ready.
It would help if each Task had a Start Date and a Duration. The Duration is normally set for how long it would take one resource to complete, then if I add resources (or remove Resources later), the Duration (and thus the Finish Date) would change accordingly.
Percentage of work complete for each task is also important.

Reports would be helpful, for example "Which Resources are over allocated (working more than 8 hours day)".
