Richard,
I really would love to see all the tasks for one person in one row, and it would be nice to split tasks down to the hour.
But I do also have a question: I've played around with those colors and came across a limitation. What if you need more than five colors? AFAIK Access doesn't allow more than five conditional formats for one field. Any idea?

You must have an older version of Microsoft Access. Access 365 allows more. I have one database with 14 conditional formatting levels in it. Time to upgrade. :)

Similar but different to Achim's comment -- I'd like to see an adjustable timescale for the Planner view as well. In my case though, I'd like to be able to zoom out from individual days and instead see weeks. This would be helpful for projects that span a couple quarters.

No, I'm on Acc 365 too, but never tried to go beyond those 5 conditionals. It would be a real pain doing this for all those fields, wouldn't it? :) That's why I'm thinking about other ways. But all I could guess of was a temporary table with binary fields in it and pre-filling them with solid-colored little pictures and using those pictures instead of multiple nested CF's.

Achim: yes, that would definitely work. Conditional formatting is the only way I could get it to work with actual color properties and continuous forms. Your idea has merit, however. It's a pain to set this up with CF, but once it's done you never have to do it again.
