I have noticed that when I want to use Default Value for currency fields, I cannot enter. Parenthesis right or left. I would like to enter parenthesis for subtotal and tax fields when I am doing a large number of refunds.

Please be more specific. See Rule #2.
Currency can only have numbers. it is a Numeric field.
Why would you want to have anything other than numeric value in a currency field?

Just make it a negative value.

Instead of (1000) use -1000

Parentheses around negative values is a Windows setting.

In my Account Balances series, I do show you how to enable the ability to type calculations into individual cells, like:

81+1234+12-231

And then use VAL() to calculate the total.

I think it's in that series. Somewhere. I know it's in the final database. LOL.
