To do what you are describing without crazy code, you need to make the notes as a child table of the current table you have notes for, for example, if you want to add time stamped notes to customer table, create a new table, name it something like customer notes table, where you will have notes ID, customer ID, daytimestamp, and notes.

Now on the sub form, you enter the notes disable delete and make the default value for date time stamp to equal now().
