I run a business that has three types of customers. They are retail, commercial, and industrial, where ie, retail requires less fields than commercial or industial customers.  Additionally, we perform multiple services to some or all customers (not labor/time trackable) along with selling various types of inventory.  Could you steer me in the right direction to construct tables?

You could create 4 Tables, 1 with the generic values that all will use, then a new table for each of the three,
Now link them with a key.
You could then have sub forms or panels and only show those if they choose a type
