I'm asking about video 03. Connect Access to SQL Server in Access SQL Server Lessons. At 4:27 you say the server name is the data source. How do I set up my data source?

Do you have winhost for a hosting provider? If you follow along exactly he shows getting the data source connection during the setup, for winhost at least, if you use a different provider you might need to look around to find the similar pages.
Setting up the connection is covered in the video, step-by-step. As I said in the lessons, if you're using a web hosting provider other than WinHost, you'll have to find that information on their site. I don't know them all. GoDaddy was similar but different.
