Shouldnt the manufacturer (Ford, GMC, Hummer, etc.) and the model be separate tables?

In tables rather than spelled out.

If you're talking about my example in lesson 2, here we are just saying that car #1 is a Ford Mustang and car #2 is a Dodge Caravan. Yes, ideally if you are going to be selecting these things using combo boxes you would have a table for make and a table for model. You might even use Cascading Combo Boxes to select them. We'll get into more advanced relationships like this as we go along.
