In the beginning (early beginner lessons) I vaguely remember Richard saying he didn't like to use hyperlinks with emails for some reason, and now in Access Expert 14 Lesson 2 we are dealing with hyperlink emails. When did this change along the way?

Richard is merely teaching a concept of how to perform a specific task. I personally always use Short Text for Email addresses and website URLs.
