How can I subdivide the headings Tables, Queries, forms in the window of all access objects in order to have a better overview of my construction?

Drop down the Navigation Menu for more options.

Yes. Select Custom then right click on the Navigation Pane and click Navigation Options. Select The Custom option and click Add Group. After you have created your groups you can click and drag the objects to that group.
