I use a list box to populate a field in my form which works fine. I made a select query which uses the value of that text box to return the country name.
In the text box "CounrtyName" I named the control source the name of the query.
I can't get me.countryname.requery to run the query once the value has been placed in the correct field on the form

The control source should be the name of a field (calculated field or a regular field), not a query. A query is usually put in the record source of a form or report. If you need to look up a value from a query, you may use the DLookup() function. And if you want a text box to have that value, put the DLookup() function into its control source, as a calculated field.
