Unless you design a custom ribbon tab, the quick access toolbar and the ribbon are stuck together. You can disable them both easily. I cover that in Simple Security. However, if you lock your database down completely like I show in my Security Seminar, then there's no way your users can edit the SQL of your queries.

The reason to allow Ribbon is for the User to view the report in Excel format (which is the Export to Excel), and the reason to hide QAT is that there is "SQL View" in it, which allows viewing of SQL Query (and even injecting their query, which eventually allows privilege escalation for Access Control).

I would just disable everything and provide the buttons you want them to have on your menu.

If your database is locked down like I show in my Security Seminar, then they will be able to view your SQL, but they won't be able to modify it. Plus you can always hide your queries in SQL statements in VBA code.

Yes, just like that video, and you can put inner joins in your SQL.
